How we tested
Our testing of the HexClad 12-piece Hybrid Cookware Set covered a broad spectrum of cooking techniques.
To evaluate its high-temperature searing capabilities and ability to transition from stovetop-to-oven cooking, we browned bone-in ribeye steaks, evaluating the crust development of the exterior against the juiciness of the interior after finishing in the oven. We also assessed pan's ability to generate and release fond to make a delectable jus.
On the opposite end of the spectrum, we scrutinized the nonstick performance of the pan by making soft scrambled eggs for a classic tomato-and-egg dish.
We also tested the pans’ ability to crisp up extra-firm tofu and a selection of fancy fungi—including lobster mushrooms, lion’s mane, and maitake—while preserving a delicate interior texture.
Finally, we tested the pots’ ability to retain even heating and steam while cooking rice and pasta.
What we like
The surface heats quickly and evenly, and it's reliably nonstick
We were able to produce an even sear on a bone-in rib eye with a HexClad skillet.
HexClad's signature hybrid surface demonstrated fast, efficient, and even heat conductivity during our tests, distributing heat quickly and smoothly across its surface.
While searing steak, the pan facilitated the development of a rich, deep brown crust across the full cut of meat without any visible hot spots. Enough fond was generated during the process to also make for a flavorful deglazing sauce once the steak was removed and wine was added.
During the sautéing of wetter ingredients like mushrooms, the HexClad pans effectively removed emitted moisture quickly upon impact, allowing the exteriors of our lobster mushrooms, lion’s mane, and maitake to achieve a desirable crispiness.
Complementing the cookware’s high temperature was its consistent nonstick capabilities. From sunny-side-up eggs to tomato sauces, its nonstick coating prevented food from adhering to the surface and provided easy release.
(We should mention, though, that some consumer reviews report food sticking in these pans, especially over time.)

The pots and pans are heavy, and the handles are bulky
The HexClad pans' uncomfortable weight and bulky handles made it difficult to complete tasks like tossing noodles and stir-frying.
This cookware is clearly made of durable construction, which, unfortunately, does come with some added weight.
While its sturdy build is appreciated for its ability to withstand high-temperature cooking, the heaviness might pose an ergonomic challenge for some.
Additionally, the handles—much like the HexClad knife set we tested—are unnecessarily thick and bulky. This made maneuvering the pots and pans, particularly when transitioning out from a hot oven, awkward and uncomfortable.
Staining occurred quickly during tests
Unfortunately, we noticed staining occurring almost immediately after we began testing the HexClad cookware.
One particular observation during our testing of the HexClad cookware set was the rapid occurrence of staining.
Despite the visual appeal of the hexagonal design on each pot and pan surface, it was susceptible to noticeable black staining after nearly every high-temperature cooking session.
While these stains were removable with extra elbow grease, they did not release easily with just a run through the dishwasher. This staining issue, which was also mentioned by some consumer reviews, raises concerns about the long-term durability and aesthetic appeal of the cookware, signaling that a replacement by HexClad may be needed sooner rather than later.
